Meat Free Monday
This week on March 17, we celebrate St Patrick’s Day in Ireland; and indeed around the globe, there will be the wearing of the green, as it seems there’s a wee bit o’ the Irish in everyone. So to celebrate, why not cook an Irish themed dish this week? Today’s recipe is for colcannon, a traditional Irish dish of mashed potatoes and cabbage.
Ingredients
Method
- Mix potatoes and kale/scallions together.
- Heat some milk with a generous knob of butter.
- Beat it into the potato mixture until smooth and creamy.
Season well, serve and enjoy while listening to the words of the Colcannon song (well this being Ireland, land of song and poem, there has to be one!)
Did you ever eat Colcannon, made from lovely pickled cream?
With the greens and scallions mingled like a picture in a dream.
Did you ever make a hole on top to hold the melting flake
Of the creamy, flavoured butter that your mother used to make?
Yes you did, so you did, so did he and so did I.
And the more I think about it sure the nearer I’m to cry.
Oh, wasn’t it the happy days when troubles we had not,
And our mothers made Colcannon in the little skillet pot.
When I read through the words, I remembered the song. 🙂 Thanks for reminding me of this dish. I might indeed cook it on St Patrick’s day

Of course, if you really want to me indulgent you can cream to this dish too…not as healthy I admit, but still..sometimes you gotta spoil yourself a little.
