Today’s Meat Free Monday recipe is a very special one! Not just because it is a delicious recipe, but because it is an original created by an original….Chari Olmedo.

I first encountered Chari on the social networking site Twitter, yes Twitter again! She is a great supporter of the Lance Armstrong Foundation and the cancer community on Twitter. 

Here is Chari in her own words…

My name is Chari Olmedo. I’m Spanish by birth and Irish by determination. Being asked to share one of my own recipes with Marie’s blog readers is a tremendous honour. This little (getting bigger by the minute) cancer-striken community I happen to have encountered recently means a lot to me and I’m only happy to help whichever way I can. And… if you like chocolate, maybe I’ll even share my top-secret ‘brandy and orange truffles’ recipe with you… one day 😉

So here it is…Chari’s own recipe for

‘Pan-fried tuna steaks with a baby spinach and mango salad’

Ingredients:

Tuna steaks(1 p.p.) If you cannot afford the fresh ones, Aldi does this handy, individually wrapped portions, frozen pack of 5. Make sure you get them plain, not marinated.
Olive oil ( 1 tb spoon)
Salt

For the salad:

1 bag Baby Spinach Leaves
1 Mango in cubes – Yet, again, Aldi does the frozen cubes, if ripe mangos are not available

Dressing:

1 tea spoon lemon juice
1tb spoon orange juice
1tea spoon honey
Olive oil (3 or 4 tb spoons but go add it to taste after mixing the others)

Put a little olive oil on a hot pan. Sear the tuna steaks, salted to taste (3 1/2 min each side should do it) and leave them rest in the pan for 1 more minute.
Mix the leaves and the mango cubes and add the dessing when you’re about to serve it.

An optional recipe for the salad would be using orange peeled segments instead of the mango and adding some finely chopped red onion and a tea spoon of grain mustard to the dressing.
