Meat Free Monday celebrates American Independence Day with this simple but eye-catching fruit salad
Ingredients
29 strawberries
29 blackberries
7 bananas
Method
- Hull and halve 29 large strawberries and set them aside.
- Arrange 30 large blackberries, as shown, in the upper left corner of a serving tray or cutting board (it should be at least 8 by 13 inches).
- Cut 58 banana slices, 3/4-inch-thick, into a bowl. Sprinkle on lemon juice and toss the slices gently with a rubber spatula to keep them from browning.
- Assemble the banana slices in rows as shown and top each slice with a strawberry
This looks just gorgeous and quite simple really if a little fiddly.

Have always wished I could be in the US to celebrate this day – was very close many times, but one of these days, I do hope I will get to celebrate in the States.

Yes, it’s a fun time. We try to find a spot where spectacular fireworks are displayed, those that are reflected in nearby water. Last year we enjoyed the show near our lake house. And small-to-large towns across America have their traditional parades. In small towns people will put out their chairs the night before to reserve a good viewing spot along the roadway. Then they go to bed and awaken the next morning, driving or walking to the parade site to find their chair still in its spot. I, too, hope you get to celebrate here someday.

I would love to post pictures, but this year they would be of a friends’ barbecue rather than a parade or fireworks. But I bet I can get some pictures from previous years to show you. Each year we do something different on the Fourth, and this year it’s a barbecue, which is also a tradition for this day.

Great holiday recipe. I guess you ladies know while fruit is good, they say not too eat too much of it cause it spikes glucose and cancer loves to chomp on glucose. But blueberries and strawberries are great antioxidants. There’s a study from Hope City that showed blueberries seem to target triple negative breast cancer. That’s the beast I’ve dealt with. Go blueberries! Hope everyone had a great Fourth.
